With many Portuguese cheeses recently qualifying for Protected Designation of Origin (DOP), this tantalizing collection contains three great examples of the premium quality cheeses emerging from Portugal, tastefully packaged on our elegant bamboo cheese boards with matching bamboo handled knife. Azeitao: Named after its village of origin, this flavorful cheese is strongly influenced by its geographic location at the foothills of the Serra da Arribida. Here, the sheep milk is rich and fragrant, and one mouthful of Azeitao reveals its delicate balance of flavors a result of the superb grazing terrain. Aged for a minimum of 60 days, Azeitao has a creamy, slightly salty interior balanced by a slightly sharp and crusty edible rind. (6 oz.) Sao Jorge: Still made in the traditional farmhouse way, this cheddary cheese is made from unpasteurized cow's milk and aged for over 120 days. Its hard, inedible, natural rind gives way to a lighter colored interior with tiny, irregular holes. Sao Jorge is incredibly versatile, lending its tangy, slightly peppery undertones well to sauces and being equally delicious served cubed into a salad or chunked and eaten with crusty baguette. (1 lb.) Serpa, a raw sheep's milk cheese from the Alentejo region of Portugal, is considered to be the most famous traditional cheese from this region. Made only from milk taken from Merino sheep, this cheese has a straw-yellow colored rind covering a buttery interior with few holes. Aged for at least 6 months, its rind is rubbed with olive oil throughout curing. Serpa is slightly sweet in flavor with hints of local herbs and grasses. It is wrapped in a white linen cloth for support, which gives it a decorative artisan appearance. (1/2 lb.) 1.88 lbs. of cheese.
